Spring signals a time of renewal, regrowth, cleansing and light, moving out of winter and into new found energy.
There exists a natural transition towards lighter fare and a desire to cleanse environment, home and body.
I tend to add more movement outdoors-hiking is a family favorite, especially with the abundance of wildflowers here in the SF Bay Area. Being out in nature with my kiddos brings a sense of awe and appreciation for God’s work and our Mother Earth.
We had a heat wave last week, (it was 90 degrees on Wednesday!) and our neighborhood pool opened for the season, another opportunity for outside exercise and fun! For me, in order for exercise to be sustainable, it has to be enjoyable and to fit well into my busy schedule. Finding ways to be active with the kids allows for that.
With the warmer weather, a natural craving for fresh greens, more fruits and vegetables arises. Our Farmer’s Market opened this week and we picked up some spinach, kale, cucumbers and more!
So, here’s a recipe for my favorite green smoothie! I love smoothies because I can incorporate several types of produce, healthy fats and super-food add-ins packed with a variety of nutrients, vitamins and minerals all in one convenient grab-and-go light meal or snack-and they’re delicious! Enjoy!!
Serves 2
In your blender add:
1 cup fresh or frozen spinach
1 cup coconut water
Blend well!
Then add in the following and blend until smooth.
1/2 green apple chopped
1/2 cup frozen mango
1/2 cup or 1 small Persian cucumber
1/2 avocado
optional add-ins
Chia Seeds
Maca Powder
Collagen Powder
Hemp Hearts
